Process

Washed Co-Fermented

After harvesting at optimal ripeness, the coffee undergoes extended fermentation and subsequently controlled co-fermentation with tropical fruit musts, developing a sweet and complex profile.

Fermentation

Cherry and co-fermented mucilage

The coffee undergoes an extended fermentation in the cherry for 60 to 72 hours in a sealed vat with a vent valve, where Brix, pH, and temperature are monitored. Afterward, it is pulped and fermented for an additional 48 hours with minimal water in sealed vats using leachates from the coffee itself and tropical fruit musts.

Drying

Solar in African beds

Finally, a slow solar drying process is carried out to preserve stability, cleanliness, and uniformity in the coffee profile.
