Process

Washed Co-Fermented

This coffee undergoes a washed co-fermented process with controlled fermentations in cherry and mucilage, developing complex and sweet profiles with great aromatic intensity.

Fermentation

Anaerobic and submerged

The coffee undergoes anaerobic fermentation in the cherry for 48 hours in a sealed container. Afterward, it is pulped and undergoes a submerged fermentation for an additional 48 hours, where the microorganisms are fed with unrefined cane sugar and honey.

Drying

Solar in African beds​

Finally, a slow drying process is carried out for between 12 and 17 days on beds inside a canopy, promoting stability and uniformity in the coffee profile.
